The first sodium free experiment was stuffed Anaheim Pepper with baked spicy garlic fries and we were pleasantly surprised with the results. 

To make the stuffed peppers we had to improvise a little because we could not use store bought tomato sauce like I normally would. A friend of mine a while back told me a fresh tomato sauce recipe so I though I would give it a shot with a few alterations.
What you will need
3/4 cup cooked Brown rice (white would work also) 4 fresh tomatoes, 2 small shallots, 2 Anaheim peppers, 1/4 lb ground beef, tarragon, oregano and pepper and some extra virgin olive oil.
-cook rice according to directions
For filling:
-Boil 3 fresh tomatoes for 7 minutes
- While that is happening put a small bit of olive oil on in the bottom of a medium saute pan and soften the shallots.
- using a slotted spoon transfer the hot tomatoes from boiling water into the saute pan and cook while mushing slightly to create a chunky sauce, season with tarragon, oregano and fresh pepper.
- add beef to sauce and brown
-add rice
Peppers: Steam lightly
-fill with filling and top with slices of the final tomato
Bake at 400 until soft about 10 minutes
